this should have been an easy one:- roasted beets and feta or goat cheese- beets & shaved fennel- never tried this but have seen it: beet rissotoroasted beets:- wash beet, trim roots, drizzle in olive oil, wrap in foil, roast @ 450 or 1hr.
That was my exact plan for them. I just didn't jump on the opportunity and just let them sit there. I was extremely excited about the thought of them paired with a bit of peppered goat cheese and mixed greens.
